Beef Involtini with Spinach & Mozzarella, Garlicky Kale

Ingredients
Scale
- 1–2 lbs beef top round, cut thinly
- Approximately 1 cup baby spinach
- Approximately 1 cup shredded mozzarella
- Salt and pepper
- 2 tablespoons grape seed or other neutral oil
- Kitchen twine, for tying
Instructions
- Lay the top round slice out on a big cutting board and cover with a thin sheet of plastic wrap. Use a meat mallet or the bottom of a heavy pan or cast iron skillet to pound the each slice until it’s slightly thinner and larger than its original size.
- Remove the plastic wrap and season the slices well with salt and pepper. Sprinkle a thin, even layer of mozzarella all over each slice, and then lay a similar layer of spinach over the top. Roll each piece up, starting at the short side. Place the seam side down, and tie three pieces of string tightly to hold the involtini together. Start with the middle tie, and then add one on each side.
- When all the involtini are tied, heat a large pan or cast iron skillet, and preheat the oven to 350°. Season each roll lightly with salt and pepper, and brown gently in the pan. The meat is thin, so you may not get a very dark brown sear, but it’s important not to overcook it at this point. When most sides are brown, remove the pan to the oven and cook for an additional 10-15 minutes, until a thermometer inserted in the center of the rolls reads 125°-130°. Remove from the oven and allow to rest before slicing.
Directions for Kale
- Chop your kale and blanch it in some salted boiling water for 2-3 minutes. Strain and rinse it under cold water until it has cooled. In a sauté pan heat up the olive oil, adding the garlic and then the kale, and sauté for just a few more minutes. Add salt and pepper to taste. This kale is wonderful with a squeeze of lemon or some fresh grated cheese. It’s delicious without them as well.
