Black Beans w/ Garlic
An easy, no-soak bean recipe!
- 1 lb black beans
- 6 cups water
- 5-10 garlic cloves
- 1 tsp salt
- 1 bay leaf
- 1/4 cup olive oil
- Preheat oven to 250 degrees. In an oven-safe pot, heat the olive oil until almost smoking. Add the garlic and brown lightly. Add the beans and the water, salt, and bay leaf. Bring to a simmer and transfer to the oven. Cook for 3 hours, stirring occasionally, or until completely tender. Season with salt and pepper, if needed.
- *You can also cook the beans in a slow cooker for approximately the same amount of time, without soaking.
- **To cook the beans a little faster, soak them overnight. This reduces the cooking time by 20-30 minutes.
