Carrot Slaw
Serves 4-6
Ingredients:
12 oz carrots, preferably assorted colors, peeled and cut into long thin strips or shaved very thinly
2 tbsp plain oil like vegetable or grapeseed
1 tbsp fresh lime or lemon juice
1 1/2 tsp sugar
1/2 tsp kosher salt
1 jalapeno or other pepper, stemmed, seeded, and minced (optional)
1/2 cup loosely packed cilantro or parsley leaves
3/4 tsp ground coriander
Instructions:
Toss carrots, oil, lemon or lime juice, sugar, salt and jalapenos in a large bowl. Let marinate for 15 minutes, tossing occasionally. Add cilantro and coriander; toss to evenly incorporate. Season to taste with salt and pepper.
