Rainbow Chard Egg Nest

- Eggs -
- Rainbow Chard - Chopped
- Onion - 1/4, chopped
- Chili Flakes (optional) -
- Chop rainbow chard into agreeably sized pieces. Chop the stems into 1/4" pieces and put in a separate pile.
- Lightly saute the onions and chili flakes in a pan. After about 8 minutes, add the chard stems. Then, in 3 minutes, add the chopped rainbow chard and mix well with onions and stems. Arrange veggies in the pan to make little nesting places for your eggs. Then crack and drop an egg into each spot. Put a lid on the pan and let the eggs poach/steam in the pan. When the eggs are cooked (start checking after 3 minutes), the greens will be ready. Enjoy with crispy, crunchy toast.
