Aloo Bukhare Ki Chutney
(Sweet & Sour Plum Chutney)

Makes 3/4 cup.
Instructions:
8-10 medium ripe plums, pitted and pureed
1/2 tsp table salt
1/2 cup dark brown sugar
1/2 tsp salt
1 tsp red chile powder
1 tsp ground roasted cumin
6-8 dates, pitted and chopped
Ingredients:
Heat a heavy-bottomed nonstick pan over medium heat and add the plum puree. When it comes to a boil, add the table salt, sugar, salt, and chile powder, and stir well. Simmer over medium heat for 10 minutes, or until the mixture thickens.
Add the cumin. Stir and simmer 2-3 minutes.
Stir in the dates and cook for 2 minutes, stirring continuously. Let cool completely and store in a sterilized, airtight container in the refrigerator for up to 15 days.
