ABOUT THIS BOX

For many years, Lisbon was my home. I lived in a beautiful old neighborhood called the Bairro Alto on one of the many “hills” of Lisbon — age-old buildings with crumbling facades, palaces with hand-painted tiles, simple houses right next to palaces, a wonderful mix of trendy shops and bars, as well as traditional shops and corner restaurants.

Women dressed in black leaned out of windows, wearing headscarves, hanging their laundry out to dry in the hot sun. The knife sharpener would pedal his bicycle around the neighborhood, hawking his service. Tramways with worn wooden seats rode up and down the hills.

It was as you would imagine Old Europe…

From the Bairro Alto, I would ride the funicular train down the steep hill to the Central Market along the banks of the Rio Tejo. The lower floor of the market was dominated by the fishmongers: strong-voiced, stocky women in knee-high rubber boots with an array of fish straight from the boat — Peixe-espada, which look like a silver blade, beautiful robalo, dorado, sardinhas, and so much more.

The sea plays an important role in the land of Vasco da Gama and fishermen. Although Portugal keeps its eyes on the ocean and turns its back on its huge neighbor, Spain, there is still a lot of shared food culture between the two. And so this week, we’re celebrating the tastes of both Portugal and Spain with the Saudade Box.

“Saudade” is a nearly untranslatable Portuguese word. Trusty Wikipedia defines it as “the love that remains” after someone is gone. It can be described as an emptiness, the overwhelming feeling of that missing someone or something that should be there in a particular moment, but is not.

So I do admit to a certain Portuguese (and Iberian) something missing from my life in LA, and here is a meal plan to make up for it, inspired by so many memories. If you’ve never been, enjoy this week’s curated selection of traditional recipes. Matiz España Paella Rice – Paella has become synonymous with Spain, and without the right rice, one cannot create a true paella. Grown in the rich soils of the national protected L’Albufera Park of Valencia, Matiz España rice is the perfect ingredient for paella, arroz negro and risotto. Its high absorption rates allows it to soak up and hold the abundance of flavors in all of your favorite rice dishes.

Conserva Culture – An Iberian menu would not be complete without tinned fish. Bivalve Mendonça A 6th generation dairy family turned cheesemakers, the Taylor family hand makes this St. Jorge style cheese from their own raw organic milk. Mendonça is similar to a traditional Açorean island-style cheese.  It’s tangy with grassy flavors up front, ending with a spicy piquant finish.  Serve on a cheese or charcuterie board, and pair it with a full-bodied red wine.

Burlap & Barrel Smoked Paprika – Sweet, red pimentón peppers are slowly dried over oak coals, which enriches them with a rich, smoky flavor that adds savory depth and deep color to your paella. Burlap & Barrel’s Smoked Pimentón Paprika comes from a single family-owned fabrica in the Extremadura region of western Spain famous for pimenton de la vera, which has a Designation of Protected Origin status from the European Union.

Charlito’s Cocina began in 2011, inspired by a desire to preserve the food preservation tradition of curing, as well as the goal of making high quality cured foods more accessible. Specializing in dry cured salami, their products are simple and made with the best ingredients, with technique that has survived and evolved through generations.

Their goods are influenced by the curing traditions of Southern Europe, particularly Spain. Their version of an old time classic chorizo is made with heritage breed, pasture raised pork. It is seasoned with a beautiful sea salt, mild paprika, and garlic. Subtle and earthy, Charlito’s Cocina chosrizo delicious with paella, greens, a crusty baguette, on your Iberian grazing board, or simply on its own.

Brewer’s Crackers is an Up-Cycled cracker company driven to reduce food waste in the craft brewing industry. 

US Breweries in the US produce over 1 billion tons of edible food waste each year that ends up in our already crowded landfills!

These grains are a valuable by-product from the beer making process. When making beer, brewers steep super high-quality grains, like barley, in water. They then strain this mixture, keeping the liquid to make beer and discard the “spent” grains.  Turns out, these grains are still incredibly flavorful and the steeping process actually unlocks valuable nutrients.

Brewer’s Crackers uses these grains in their crackers and chips providing our customers with an honest, healthy, sustainable, and delicious product.

Founded in LA by Becca Millstein and Caroline Galdfarb, Fishwife’s mission is to make ethically-sourced, premium, and delicious tinned seafood a staple in every American cupboard. Our upcoming Narrative Provisions box is inspired by Alice Waters’ wonderful book The Art of Simple Food. With the ingredients we are blessed with from our local farmers as well as delicious treats from some the Bay area’s favorite women in food: jeweled candied citrus peel from June Taylor, delectable Mt. Tam cheese from Peggy Smith (who worked at Chez Panisse for 17 years before starting Tomales Bay and later Cowgirl Creamery!), and satisfying crackers from Carol LeValley’s Rustic Bakery. This homage to Alice’s inspiring opus is a welcome reminder that we really need to do very little to create a delicious meal. Simple is the best way to let these beautiful ingredients shine.

It originally was created in anticipation of the (then) upcoming release of City of Gold.  which celebrated the culinary landscape of Los Angeles as seen through the eyes of Jonathan Gold, our favorite Pulitzer Prize-winning culinary geographer who redefined the art of the meal and the joy of food criticism.

I am from Aix-en-Provence in the South of France where lavender, grapes and olive trees are everywhere. I was lucky enough to have a beautiful childhood and inspiring grandparents who lived on an amazing vineyard outside of Aix, in the Provençale countryside.

Not realizing the gift that they gave me at the time, I have held on to all those memories and recipes that I grew up with…

In Provence, the food is simple, and we eat a lot of it! There are no diets or restrictions because when you use real ingredients, they are all good for you.

Pork chops, simply grilled with lemon juice, or salad – these are some of the everyday recipes I make for my family of four little boys. As a busy mom, I can’t spend hours in the kitchen at night cooking dinner. So the ingredients are good, fresh, simple, and I don’t do too much to them. Just the way we like it in France. I hope this meal plan will help you get inspired in the kitchen!

Letter From Our Founder

2020 means Narrative Food is turning 10 years old!  For a decade now, we have delivered boxes of food 51 weeks a year– through mudslides, fires, torrential rain, and drought. But we have also enjoyed so many joyful moments, like when Margaret Greenwood knocks on the door with an armful of jams she made from Nikiko Masumoto’s peaches or Joan Leclerc drops off bags of Earthbean coffee for our recent  Original Innovators boxes.

Yes, sometimes it can feel heroic getting our boxes to your doorstep, but the fact we have made it for 10 years now is entirely thanks to you, our wonderful customers. We are so grateful to you for supporting amazingly delicious food that also nourishes and regenerates our soil, community, and health.

As Narrative Food moves into its second decade, we are creating our next 10-year plan. Exploring how to grow the impact of our network of like-minded growers, makers, customers, and stories.  To this end our goal is to thrive, not just survive, as a B Corp certified, woman-owned business – and, most importantly, to further enrich the experience we provide for our community around food. A Letter From Our Founder

2020 means Narrative Food is turning 10 years old!  For a decade now, we have delivered boxes of food 51 weeks a year– through mudslides, fires, torrential rain, and drought. But we have also enjoyed so many joyful moments, like when Margaret Greenwood knocks on the door with an armful of jams she made from Nikiko Masumoto’s peaches or Joan Leclerc drops off bags of Earthbean coffee for our recent  Original Innovators boxes.

Yes, sometimes it can feel heroic getting our boxes to your doorstep, but the fact we have made it for 10 years now is entirely thanks to you, our wonderful customers. We are so grateful to you for supporting amazingly delicious food that also nourishes and regenerates our soil, community, and health.

As Narrative Food moves into its second decade, we are creating our next 10-year plan. Exploring how to grow the impact of our network of like-minded growers, makers, customers, and stories.  To this end our goal is to thrive, not just survive, as a B Corp certified, woman-owned business – and, most importantly, to further enrich the experience we provide for our community around food. Yes, we have a vision.

I was once driving from Milan to Tuscany with a man deeply knowledgeable about Italian food.  When we passed the sign indicating that we were leaving Emilia and entering Tuscany, an immense sigh suddenly escaped from my lips.  “Oh yes,” he smiled, “Tuscany, so much like your Napa Valley.”

It seems logical that dishes I discovered in Liguria and Tuscany and points north and south translate seamlessly to California.  Focaccia, which is the bread of Liguria, ricotta from Tuscany, a simple no stirring risotto made with squash ….I am delighted to think that people will be discovering the best of Italy made with the best of California’s ingredients.”  — Carol Field

This week’s box is in memory of my favorite Aunt, Carol Field, author of the classic cookbook The Italian Baker, published in 1985. She fell in love with Italy, taught herself Italian and later introduced millions of delighted Americans to ciabatta and focaccia and other regional breads. 

In gratitude, we have drawn inspiration from recipes from three of Carol’s cookbooks to create a beautiful and manageable seasonal meal plan of authentic Italian flavors. In Nonna’s Kitchen: Recipes and Traditions From Italy’s Grandmothers, Celebrating Italy, which describes the feasts and festivals of Italy and the foods with which they have been celebrated for centuries, and lastly Italy in Small Bites, recipes for the merende, or simple and irresistibly delicious between-meal meals cherished by Italians for centuries.

In Nonna’s Kitchen was written in memory of Carol’s own grandmother and mother, but also her mother-in-law, Gladys Field, who, as it happens, is my own Nonna (grandmother)! Laddy, as I called her, was a wonderful cook. I remember her tending her vegetable garden at the lake house in Minnetonka, near St Paul/Minneapolis, where she summered and where we loved to visit. She grew the most delicious tomatoes, zucchini and basil.

As for her classic work The Italian Baker, it remains this seminal connection to everything we love about Italian food, homemade flavors and culinary joys in the kitchen. In 1986 the International Association of Culinary Professionals named it the best book in its category, and in 2010 the James Beard Foundation included it in its “Baker’s Dozen,” a list of 13 indispensable baking books. Bravo.

Klancy Miller @klancycooks is a cookbook author and writer that recently kicked off a campaign to launch For the Culture, a biannual printed food magazine that celebrates Black women in food and wine. The stories in For the Culture will be about Black women throughout the diaspora, written by Black women and photographed and illustrated by Black women. Oriana Koren @orianakoren is a “photo-enthnographer on a mission to expand the decolonized gaze in editorial and commercial food and travel photography by centering the experiences and perspectives of formerly colonized peoples. Over the last five years, Oriana has focused their lens and personal research on African diasporic foodways, mining the intersections of collective memory, revisionist histories, and the migration of Black Americans from the South across the nation.” (quote from their website) Check out their work HERE. 

Museum of Food and Drink’s next exhibition African/American: Making the Nation’s Table will be the country’s first major exhibition celebrating the countless black chefs, farmers, and food and drink producers who have laid the foundation for American food culture. The MOFAD curatorial team has been working on this exhibition with Lead Curator Dr. Jessica B. Harris for over two years now, and it is set to be their most powerful show yet. We admit: We are unlikely cookbook writers. I’m a columnist and a historian, born in Washington, but now living in London; my friend Danielle is also a journalist, based in Washington. We’ve also picked an unlikely topic.

While writing From a Polish Country House Kitchen, we were often teased: “How many recipes can you get out of boiled potatoes?” Unfortunately for many of us, including even the millions of North Americans with Polish ancestry, the very term “Polish cooking” conjures up a vision of heavy, greasy dishes, the food of exile and poverty.

But as I’ve known for a long time – ever since my husband and I restored an old house in the Polish countryside, twenty years ago – Polish cuisine is long overdue for a reputational revival. Traditional cooking has always been based on fresh vegetables and meat which is organic because it has been raised in someone’s garden –  and it has always included aromatic soups, flavorsome game, and crisp chopped salads. In recent years, creative chefs have also begun to experiment with new versions of traditional dishes, from herring tartare to pierogi as exotic as the dim sum of Hong Kong. Our cookbook is meant to impart the flavors of the traditional cooking and the taste of the more exotic innovations – with, of course, an American twist that we bring ourselves. My name is Matthew Armistead; I am from Blackburn in the North West of England. I moved to Los Angeles 10 years ago with my family and work as a chef. I have been a chef for over 20 years and started cooking mainly because I love eating. Preparing food and sitting around the table spending time with family and friends has always been the most important and constant part of our daily life, and what bring us together as family, friends and community. I believe people who use Narrative Food will hold these same values and that home cooking, supporting local farmers/producers is crucial to addressing the environmental, health, and social issues that we face in our communities today.

The recipes I have put together are all dishes I would cook at home and have also been included on my menus at some time. The recipes aren’t too chefy, but a couple (the lamb and chicken) take a bit of time to cook. I try to have an afternoon when I cook and stock the fridge. There is nothing better than coming home and simply reheating a stew or soup that you have previously made, and that are also great for school lunch. You can feel confident your kids have good food – whether they choose to eat it or not is a different story.

The theme for the menus is autumn, but as with any menu writing, the starting point is always what is available. With the weather getting slightly cooler and the days shorter, it’s comforting to tuck into a stew or a warming soup and the salad leaves go to the hardier winter leaves such as escarole. I hope you enjoy the recipes, and can all spend time with your loved ones around the table.

“IRAQ is: Mesopotamia, the Cradle of Civilization, the Fertile Crescent, the land of the Tigris and Euphrates, the birthplace of Abraham, the site of the Garden of Eden, the supposed burial ground of Noah’s Ark, home to Gilgamesh. It has deep and powerful roots. And those roots are reflected in the cuisine.

The very first cookbook ever written was from Mesopotamia, on stone tablets.

Iraq’s rich history and glorious ethnic and cultural diversity means its food is complex. Iraqi cuisine is influenced by Levantine, Iranian, Turkish, Kurdish, Armenian, Jewish, and Indian cuisine, among others, creating something wholly original and beautiful.

Alas Americans seem to know very little about Iraq other than war, destruction, and violence. It’s all we get to see. This limited view of such a beautiful country, which up until the sixties was known as “The Jewel of the Middle East,” continues an Orientalist tradition of pigeonholing the entire region as violent and destructive. We learn that the violence is somehow inherent and so we choose to ignore it, without considering the consequences.

More and more Iraqis are using social media to show us a different view of Iraq than the one portrayed in media. They are moving the camera lens an inch, to the parts we don’t usually see, the beauty and life that exists despite the violence, corrupt policies, and foreign meddling, the curses of such rich land and soil.

A few years ago Snapchat featured a Day in the Life of Baghdad, in which Iraqi snaps of daily life were selected, surprising millions. We don’t think about carnivals, delicious food, beautiful landscapes, people laughing and enjoying life when we think about Iraq. And sadly unless we look for it we won’t see it. The popular Instagram account @EveryDayIraq features a collection of photographs that depict daily life among its people, beyond the scope of violence. 

Yes, there is corruption and violence in Iraq – as there is here and anywhere. But there is so much more to Iraq. And given our active participation in the region, it is at the very least our responsibility to attempt to understand our shared humanities.

As it always is, food is a powerful cultural bridge. This box is more than just recipes and ingredients: it’s a positive social force! Enjoy!

Changing the narrative one box at a time…

Read below for a heartwarming response that Sara received after one of our Narrative Food community members received our Add a Little Lemon Narrative Provisions box…

A few months ago I designed an Iraqi-inspired meal-kit delivery box with Narrative Food that delivered within and beyond the greater Los Angeles area. The goal was to introduce people to Iraqi food in the hopes that they might think about Iraq in a new context and what that might mean. I wondered if people would actually take my message into consideration when making the meals or if they would simply eat the food and go on with their lives. 

And then I received this incredible letter, which I’ll leave you with. 

Apologies that this email took so long. I wanted you to know that our “Add a Little Lemon” Iraqi box was extra special. During each night of cooking and eating we talked about how the food was from a far away country named Iraq. We loved every bite of it, and especially fun was the drama of sizzling turmeric oil and serving on giant platters and the funny instructions like “don’t be lazy, tembal”Anyway, my 3 year old has recently taken a keen interest in maps and finding countries/states/etc. He showed me a doodle of a map he had drawn declaring, “This is Iraq!” So I just love love love that his first associations with Iraq – just as Sara was hoping – will not be violent or terrible, but delicious and wonderful instead.

As a national day of remembrance, Memorial Day has also become the unofficial start to summer and the final close of another school year. Leisure time is revived; summer travel plans are in order; backyards eagerly await to be filled with friends and family. We like to think of Memorial Day as the beginning of several weeks of wanderlust and exploration, a time when people gather together to remember loved ones lost while charting a course for relaxation, followed by renewal, meaning, and purpose. 
It’s also a time to come together as a nation to remember, honor, and mourn the sacrifices that U.S. military personnel have made to their country over the years. Many American citizens have their own way to celebrate this special holiday. Elizabeth Poett and The Ranch Table

ABOUT THIS BOX

Elizabeth Poett was born and raised on Rancho San Julian, her family’s 14,000-acre cattle ranch on California’s Central Coast. She grew up climbing trees in a tutu and cowboy boots, gathering cows, and helping her mother cook and host events.

In 2007, after college in Ohio and a stint in Greenwich Village, Elizabeth Poett moved back to the ranch and started Rancho San Julian Beef, selling her family’s ranch-raised beef directly to chefs and consumers. Elizabeth spends her days looking after cattle and the sheep, chickens, and turkeys that she raises seasonally, as well as cooking (and canning and pickling) with all of the delicious and varied ingredients the ranch and California’s Central Coast, have to offer. WHY THIS BOX?

The ranch, graced by California live oak, also grows a variety of vegetables, grapes, and lavender. Its tradition of environmental stewardship extends to solar power with a watering system designed to protect its many creeks and arroyos. Faced with the severe challenges of periodic droughts, Elizabeth Poett, who was born and raised on the ranch, has worked with her family to maintain the ranch’s sustainable farming practices by bringing on biodynamic guru Chris Thompson. The crops, cultivated with minimal water, are absolutely beautiful – a testament to the love and care that has gone into growing them.

ABOUT THIS BOX

My name is Danielle Goldstein, and I’m a chef in Los Angeles. My career has taken me through working in restaurants, catering fancy events, R&D in test kitchens, teaching culinary school, and being a personal chef—but my fondness for working with food stems from the way it brings people together. There is something so simple, and so important, that connects us when we talk about food, share food that we have crafted, or sit down at a table together.

Cooking fancy food is fun and challenging, but cooking homey food carries a deep level of meaning. I’ve come to realize that whenever I cook with the intention of making people happy, the meal will be appreciated and enjoyed. Most of my chef friends’ favorite recipes to cook are approachable, full of flavor, and satisfying. When I was a cook at Acquerello restaurant, I remember the chef-owner Suzette asking me to make simple pork meatballs for the prep cooks and servers, which I poured my heart into (in between producing a foie gras-truffle mousse and a ragu made from imported veal and pancetta for our Michelin-starred menu). The staff loved those meatballs and often requested an encore. 

WHY THIS BOX?

This box is a collection of favorite recipes from my family and friends, as well as from myself. I hope that this box will speak to your soul as well as to your stomach.

ABOUT THIS BOX

For the past seven years, one of our favorite stops at the Santa Barbara farmer’s market has been Rancho San Julian’s market table, where Elizabeth Poett sells pastured beef from her family ranch. This 14,000-acre ranch has been in Elizabeth’s family for over 8 generations and is one of California’s oldest family-run ranches. A profound love and respect for the land has been passed down through these generations. They have been raising cattle on pasture and using traditional herding methods on horseback for more than 200 years.

WHY THIS BOX?

The ranch, graced by California live oak, also grows a variety of vegetables, grapes, and lavender. Its tradition of environmental stewardship extends to solar power with a watering system designed to protect its many creeks and arroyos. Faced with the severe challenges of periodic droughts, Elizabeth Poett, who was born and raised on the ranch, has worked with her family to maintain the ranch’s sustainable farming practices by bringing on biodynamic guru Chris Thompson. The crops, cultivated with minimal water, are absolutely beautiful – a testament to the love and care that has gone into growing them.

This week, we’re delighted to offer some of Elizabeth’s favorite beef dishes, along with a few other recipes that highlight her wonderful produce.

Since everyone is an honorary Irishman or woman on St Patty’s day, we’ve put together a lovely green-themed box inspired by the emerald isle. 

BOX INGREDIENTS

From a green rainbow of English Peas, Brussel Sprouts, Cabbage and Asparagus, we also have Irish Soda Bread, green pistachios, and of course cheddar cheese.

For this box, we are taking a new approach for those of you with “Omnivore” Large Real Food Boxes. Instead of three separate cuts of meat, there will be only two, however one of them is a double-size portion of pre-brined beef from Marin Sun Farms, ready to cook and be used in two meals featuring corned beef — if you have never tasted home made corned beef this will be a revelation and the kids will love it! Since the corned beef is slow cooked, your efforts will be rewarded by using it in two separate dishes, so you get more “bang for your work”.

ABOUT THIS BOX

We couldn’t think of a more perfect way to celebrate the Chicano culture and work of José Montoya than with local ingredients and recipes inspired by LA’s favorite Chicano dishes. Our Chicano Box was originally planned in collaboration with UCLA’s Fowler Museum which featured artist, poet, and activist José Montoya (1932-2013). Having grown up in the San Joaquin Valley as a field hand, Montoya experienced the harsh living conditions so many migrant farm workers endured. Life on the fields informed his activism, his poetry, and his art. Montoya worked tirelessly in support of Cesar Chavez’s United Farm Workers movement to ensure fair labor standards. How better to honor Montoya and his efforts than with a box of locally and sustainably grown food celebrating Chicano culture?

We couldn’t think of a more perfect way to celebrate the Chicano culture and work of José Montoya than with local ingredients and recipes inspired by LA’s favorite Chicano dishes.

Poetry + Tamales: a Collaboration from Out of the Box Collective + the Fowler Museum

Food is culture, and that’s why we are so excited about our upcoming collaboration with the Fowler Museum at UCLA. To celebrate their exhibition featuring Chicano artist, poet, and activist José Montoya (1932-2013), and to bring attention to the Museum’s crowdfunding campaign this month, we’ve created the Chicano Box, filled with local ingredients and recipes inspired by LA’s favorite Chicano dishes.

WHY THIS BOX?

If you’ve always wondered how to cook tamales, here’s your chance! We have recipes (see below) and ingredients from Wes Avila of Guerrilla Tacos to cook Butternut Squash Tamales and Sweet Potato Tortillas. From Gilberto Cetina of Chichen Itza Restaurant, we have ingredients and a recipe for Ceviche. From Carlos Salgado of Taco Maria, we have a recipe for Salsa Negra to cook with chicken. And last but not least, we have a Carne Asada recipe from Roy Choy, just to put a multi-cultural spin on things.

WHAT’S INSIDE?

GMO-free masa, corn husks, local grassfed carne asada, Santa Barbara Cheese Co. queso fresco, a variety of chilis, Rancho Gordo piloncillo sugar, fresh, local organic produce from our favorite farmers, and recipes from local chefs to prepare a variety of Mexicali meals.

WHY IT MATTERS:

Having grown up in the San Joaquin Valley as a field hand, Montoya experienced the harsh living conditions so many migrant farm workers endured. Life on the fields informed his activism, his poetry, and his art. Montoya worked tirelessly in support of Cesar Chavez’s United Farm Workers movement to ensure fair labor standards. How better to honor Montoya and his efforts than with a box of locally and sustainably grown food celebrating Chicano culture?

Is It Hot or Cold Box

Over here at OTB, we feel pretty certain that we’re not alone in the feeling that we don’t quite know what season we’re in. Okay, technically it’s autumn. In spite of this fact, we’ve yet to see one of those gorgeous crisp fall days. Some days are hot and sunny, some are muggy and cloudy, some nights are cold, and some are warm. We don’t know if it’s hot or if it’s cold!

This box was designed to include some meals for cold weather, and some meals for hot weather, so that you’re prepared with a comforting pot roast for a chilly  night, or our favorite hot dogs and sweet corn on the cob for weather so hot you have to do your cooking outside. We decided that it was best to give you both options, since it’s anyone’s guess what the weather will be like.
