Fried Okra

- 2 cups okra
- ¾ cup corn starch
- 1 tsp baking powder
- 1/3 tsp pepper
- ¼ cup flour
- ½ tsp salt
- ½ cup water
- 1 eggs (slightly beaten)
Instructions
- Combine the first 5 ingredients, and then stir in the egg and water until smooth. Store in the refrigerator for 15 to 20 minutes.
- In the meantime, slice the stems off the okra and discard (You may also cut them into bite size pieces, if you wish).
- After at least 15 minutes, remove the batter from the refrigerator. Heat enough peanut oil in a frying pan (enough for them to float – approximately 1/2 inch deep) until the end of a wooden spoon bubbles or the oil is 350°F.
- Working in small batches, dip okra into the batter. Allow excess to drip off into the bowl.
- Carefully place individual pieces of okra into the hot oil. Cook the okra in the hot oil until crispy and light golden brown, about 30 seconds to a minute.
- Remove the fried okra from the oil with a spider or slotted spoon and allow to drain on a paper towel. While still hot, season the okra with additional salt if desired.
