For the carne asada
- 1.5–2 lbs beef skirt steak
- 4 garlic cloves
- 1/2 cup cilantro leaves
- 1 orange, juiced
- 2 limes, juiced
- 1/2 onion, thinly sliced
- 2 TB white wine vinegar
- 1/2 cup oil (olive or plain, like canola) + 1 tablespoon
- 1 tsp salt
To finish
- Tortillas, warmed or browned on the stovetop
- 1/2 onion, finely chopped
- A few fresh cilantro leaves
- 1 avocado, cubed
- Sour cream, optional
- Shredded or crumbled cheese (cheddar, Vella, queso fresco), optional
Instructions
For the marinade
- On a cutting board, finely chop the garlic and cilantro, add the salt and chop more finely, until almost a paste. Combine the cilantro/garlic paste in a baking dish, and add the white wine vinegar, oil, sliced onion, lime juice, and orange juice. Mix well, and put the skirt steak into the marinade, turning it to make sure all parts are covered. Leave to sit for one hour at room temperature, or up to 4 hours in the refrigerator.
- While the steak is marinating, prepare the other ingredients, except the tortillas, which should be warmed at the last minute.
- If you held your steak in the fridge, pull it out at least 30 minutes before you plan to cook so it can warm up a little. Remove the steak from the marinade, and pat dry with a towel or paper towel. Heat a cast iron pan, a grill pan, or a charcoal grill over high heat. If using a pan, add the 1 tablespoon of oil; if using a grill, make sure the grates are oiled. (If you’re using a pan and your skirt steak is long, you can cut it into pieces that will fit better in the pan.) Cook the skirt steak 5-8 minutes per side, until medium rare. Usually skirt steak is thin and cooks in this amount of time, but you may need to cook it longer if you have a thicker piece. Cut a small slit in the meat to check if you’re unsure.
- Leave the meat to rest for 5 minutes and then slice it thinly across the grain. For a skirt steak, this is usually along the longer side. Pour the resting juices over the sliced meat.
- To assemble the tacos, fill each tortilla with a little sliced meat, raw chopped onion, cilantro, avocado, and cheese and sour cream, if desired.
