Aloo Gobhi Ki Tahiri (Rice w/ chunky potatoes & cauliflower)

Aloo Gobhi Ki Tahiri

Serves 4.

Ingredients:

1 cup raw rice
2 tbsp ghee
1 tsp cumin seeds
2 bay leaves
1″ cinnamon stick
1 black cardamom pod (optional)
3-4 whole black peppercorns
4-5 whole cloves
1 medium red onion, thinly slices
1 medium potato, peeled and cut into 1/2″ cubes
1/2 head cauliflower, separated into small florets
1 tsp ground turmeric
1.5 tsp red chile powder
1 tsp garam masala
1 tsp table salt

Instructions:

Put the rice in a large bowl, wash in plenty of water 2 or 3 times, and drain. Add 3 cups water, and soak for 20 minutes. Drain the rice in a strainer.

Place in a medium nonstick saucepan over medium heat. Add the ghee, and when small bubbles appear at the bottom of the pan, add the cumin, bay leaves, cinnamon, cardamom, peppercorns, and cloves, and saute for 1-2 minutes or until fragrant. Add the onion and saute for 3-4 minutes, or until lightly browned.

Add the potato and cauliflower, and saute over medium heat for 2 minutes.

Add the soaked rice, turmeric, chile powder, garam masala, and salt, and stir. Add 2 cups hot water and stir again. Bring to a boil, then lower the heat to low, cover, and cook for 15-20 minutes or until the rice is tender.

Transfer to a serving dish. Serve hot.
