Classic Coleslaw

  • Green Cabbage – 1/4-1/2 head depending on size
  • sea salt – 1 tbsp
  • Carrot – 1, trimmed and peeled
  • Tart Apple – 1, peeled
  • Onion – peeled
  • Olive Oil – 1 tbsp
  • Plain Yogurt – 1/4 cup
  • lemon – 1/2, juiced
  • salt –
  • Pepper – freshly ground

Instructions

  1. Core the cabbage and cut into long, narrow strips. Place these in a medium bowl, toss with the salt, cover, and leave for at least 1 hour. (Refrigerate if you are going to wait any longer than that.)
  2. When ready to use, drain off any liquid. Cut the carrot and the apple into thin matchsticks and put in a large bowl. Coarsely grate the onion and add to the bowl. In a small bowl, whisk together the olive oil, yogurt, and lemon juice. Season with salt and pepper. Toss the cabbage mixture with the dressing, and taste to make sure you are happy with the seasoning. Serve.
