Courgette is another word for zucchini. Here’s a simple recipe for a summer squash gratin. This is delicious as a main served with a side salad or as an accompaniment to a protein.

Courgette Gratin
Ingredients

- 5 zucchini and/or yellow squash, thinly sliced
- 3 tbsp butter
- 1/2 cup cheddar cheese, grated
- 1/2 cup créme fraiche or sour cream
- 1/2 cup bread crumbs
- 1 tbsp thyme, freshly minced
- 1/4 tsp pepper
- 1/2 tsp salt

Prep
- In an oven-safe 13×9 baking dish, rub bottom and sides with half of the butter.
- Line up the sliced zucchini and yellow squash in the dish. Top with crème fraiche and sprinkle thyme, salt and pepper.
- Then sprinkle on the cheese, followed by the bread crumbs. Top with the remaining butter, which should be melted.
- Bake in 400 degree oven for 25-30 minutes until bubbly and golden brown.
