
Eggs in a Nest

- Chopped onion – 1/2
- Minced garlic – 1
- Rough chopped chard – 3/4 lb.
- Eggs – 2-4
- Olive oil –
- Salt & Pepper – to taste

- This is one of my favorite simple meals, maybe because it makes me feel like a winner at poaching eggs…hmmm. Or maybe because it is delicious, healthy, straightforward and loaded with nutrients. I like this meal served in a bowl of lovely chewy brown rice. And, of course, a soft oozing yolk.
- We have prepared this dish before, so I want to encourage anyone who may be repeating this dish to be creative with your different seasonings. You can totally shift flavor profiles and experiences with just a couple pinches of this or that. So this is the standard technique for “eggs in a nest.”
- Soften onions and garlic in olive oil in a pan, cooking over medium flame for about 7 minutes. Add swiss chard to onions, and mix together. Once the chard starts to wilt, make little indented spots in the chard and crack an egg into each hole. Turn the temperature down to medium low, and put a lid on the pan. Steam the eggs until cooked to your preference. Guacamole and salsa are great accompaniments.
