Roasted Pork Tenderloin with Sliced Tomatoes, Pesto, & Burrata

Ingredients

  • 1 pork tenderloin
  • 3 tablespoons olive oil
  • 2 garlic cloves, finely chopped
  • 1 tablespoon chopped fresh thyme plus fresh thyme sprigs for garnish (optional)
  • 12 shallots, cut into 6 wedges through stem end, peeled
  • 23 peaches or nectarines (opt)
  • 1 bunch of basil, leaves picked
  • 1 garlic clove, peeled
  • 1/4 cup pine nuts, lightly toasted
  • 2/4 cup grated Parmesan cheese
  • 1/2 cup EVOO
  • Sliced tomatoes
  • Burrata Cheese

Instructions

  1. PORK TENDERLOIN
  2. Preheat oven to 475°F. Mix oil, garlic, and chopped thyme in small bowl. Rub mixture over pork, and shallots. Heat large nonstick skillet over medium-high heat. Add pork and shallots; brown on all sides, turning, about 7 minutes. Transfer shallots to platter. Transfer pork to baking sheet (do not clean skillet). Roast pork until thermometer inserted into center registers 145°F, about 10 minutes.
  3. Meanwhile, add stone fruit to same skillet and cook over medium-high heat until brown on cut side, turning once or twice, about 4 minutes. Transfer stone fruit to platter. If you prefer not to use your stone fruit, simply deglaze your pan with the shallots
  4. Slice pork; arrange on platter. Surround with shallots and stone fruit. Drizzle sauce over pork. Garnish with thyme sprigs.
  5. PESTO
  6. Pound the garlic clove with a pinch of salt in a mortar and pestle to a paste; then add the pine nuts (or walnuts work too!) and continue to pound. Add the Parmesan, then transfer this mixture to a bowl. Coarsely chop the basil leaves and put them in the mortar. Pound the leaves to a paste. Return the pounded nut mixture to the mortar Pound the leaves and pine nut mixture together. Continue pounding as you gradually pour in the olive oil. Taste for salt and adjust if necessary.
  7. Serve the pesto mixture with sliced tomatoes and burrata cheese with the roast loin. If you don’t have the ingredients to make the pesto (the nuts and parmesan not included in the box), you will find that a drizzle of olive oil and a sprinkling of sea salt is all it takes to dress the tomatoes and burrata!
