Gazpacho

Gazpacho is one of those soups that is very flexible, depending on what you have available. The basic ingredients are normally tomato, green pepper, cucumber, onion and garlic, and stale bread, but you can add various things like corn, or strawberries, or watermelon. Experiment!

Ingredients
  1. 1 lb tomatoes
  2. 1 green pepper
  3. 2 cloves of garlic
  4. 1 cucumber
  5. 1 small red onion
  6. 2 slices stale bread, chopped
  7. Olive Oil
  8. 1/4 cup Red Wine Vinegar
  9. Salt & Pepper
Instructions
  1. Put your bread in the bottom of a big bowl. chop up all your veggies, and put the in the bowl, on top of the bread, tossed with 2 tsp of salt. Let this sit for at least 30 minutes so the juices can do their thing.
  2. Puree everything in a food processor or blender, working in batches if space requires.
  3. Drizzle in some olive oil to add some smoothness to the soup. You can add the red wine vinegar, and puree some more, seasoning to taste.
  4. Serve with some crusty bread, butter and a wedge of cheese.
